Melissa / lemon balm originally comes from the eastern Mediterranean region. Today it grows worldwide.Melissa (melissa officinalis) is also called lemon balm because of its lemon-like aroma, which exudes when the leaves are ground. It is a perennial herb with opposite leaves, in whose armpits white flowers grow. When harvesting lemon balm, care should be taken to do this before the flowering period, when the essential oil content is highest.
Fresh shoots are harvested before flowering.
